Domaine Pascal Jolivet is a wine producer located in the Loire Valley, France. The domaine is known for showcasing the different characteristics of terroir in the Loire via a hands-off winemaking approach and single-appellation Sauvignon Blanc bottlings.

The domaine owns 42 hectares (103.8 acres) in Sancerre, with 8ha (19.8 acres) in Pouilly-Fumé, and 15ha (37.1 acres) in Touraine. These 65ha (160 acres) make up 50 percent of production, while the rest comes from purchased grapes or grape juice. The grapes – mostly Sauvignon Blanc and some Pinot Noir – are typically hand-harvested and vinified separately according to their origin to allow for terroir expression. The Sancerre grapes come from limestone, flint, and clay soils, while the Pouilly-Fumé grapes originate from a large diversity of Ice Age subsoil.
